Ham and Egg Cups with Skinny Latina Chimichurri
These ham and egg cups are excellent for meal prep, brunch, and they are keto friendly
- Coat muffin cups with oil or butter, line up each cup with a slice of ham (press carefully ruffling edges to the sides), add shredded cheese, crack an egg, top with halves of cherry tomatoes and Skinny Latina Chimichurri, and season with salt and pepper.
- Bake in the oven at 350F for 15-20 mins, until the whites are set and yolks have thickened. Let cool down for a couple of minutes and remove from muffin cups. Enjoy!
