Skinny Latina Chicken Fajita Burrito Bowl
- On low medium heat, add 1 tbsp of olive oil and saute half an onion (thinly sliced), half bell pepper (thinly sliced), half a tomato (seeded and thinly sliced), 1 green onion (thinly sliced), ½ tsp of minced garlic, and season with salt and pepper. Once all the veggies get some color and the onion is translucent, add about 1-2 cups of shredded chicken (I used leftover store bought roasted chicken that I had in my fridge). Add 2-3 tbsp of Skinny Latina Caliente Chimichurri, mix well and season with salt and pepper to taste.
- NOTE: you can also use our regular (not spicy) Skinny Latina Chimichurri if you prefer.
- How to assemble your bowl: Start with a bed of cooked brown rice, cooked beans, add sliced iceberg lettuce for texture, a little bit of fresh salsa or pico de gallo. Top it off with the Chicken Fajita, shredded cheese, guacamole and a little bit more salsa. Serve with tortilla chips on the side, if desired. ENJOY! Buen Apetito!
